Fideo Seco is a traditional Mexican recipe made of noodles and cooked in a tomato sauce. Mildly spicy and ready in minutes. This dish makes a great side dish or yummy light lunch. by Mama Maggie's Kitchen
  • 3 Roma tomatoes, cut in half
  • ¼ onion, chopped
  • 1 garlic clove, whole
  • 1 chipotle in adobo sauce
  • 1 cup water
  • 1 teaspoon chicken bouillon
  • 2 tablespoon olive oil
  • 1- 7 oz package of Fideo
  1. Place the tomatoes, onion, garlic, chipotle, water, and bouillon in a blender.
  2. Blend until smooth.
  3. Set aside until ready to use.
  4. In a large stock pot, heat the olive oil.
  5. Add the fideo.
  6. Stir constantly until it is golden brown. About 2-3 minutes.
  7. Do not leave this alone or it will burn.
  8. Add the tomato mixture.
  9. Stir and cover with a lid.
  10. Reduce heat on low.
  11. Cook for 10-12 minutes, or until the liquid has absorbed.
  12. Serve.
  13. Optional toppings - avocado, Queso Añejo, sour cream.
  14. Enjoy.
