There are a few things I’m not fond of in the morning. 1- making coffee and 2- making breakfast. As a single gal, I have to make my own coffee because it’s a necessity, and I will sadly admit to skipping breakfast most mornings. It’s a lack of energy thing. I usually don’t finish my first cup of coffee until mid morning. If I eat anything for breakfast, it must be prepared fast like a yummy breakfast fruit salad.
The other day, I was shopping at my local Whole Foods in Hillcrest, San Diego. It’s one of the only places I buy chicken, and I stumbled across these Muscat Beauty grapes imported from Chile. They’re not really red or green. They are somewhere in between both colors. My first thought was a wine and cheese board, but then a light bulb went off. I can sneak them into a fast breakfast fruit salad.
The next morning, while my coffee brewed, I chopped up an apple and an orange. The grapes just needed a quick rinse. The Muscat Beauty grapes are sweet, bright, and fresh. Not tart like some red and green grapes.
I topped my breakfast fruit salad with some plain Organic yogurt (vanilla yogurt or Greek yogurt would work too), a sprinkle of cinnamon, and some flaxseed. I try to sneak in flaxseed wherever I can. I even bake with it. Oh, another thing, I put my fruit salad in a wine glass. Kinda fun to be using a wine glass in the morning. Ha!
By the time I finished assembling my breakfast fruit salad, my coffee was brewed, and I was ready to start my day. Next time, I will put a cheese board together with these grapes. I’m thinking they would pair nicely with a manchego and a Cava wine, or another sparkling white wine. Yum!
