Spicy Spinach Dip

When I was a kid and living in the LA area, I remember watching sports with my dad and older brother. Not watching sports meant not being with them, and I loved being around them. I have so many fond memories of watching the Dodgers and the Lakers. I remember distinctly when the Raiders left LA. Oh, the betrayal! Sports food back then was my mom’s homemade guacamole or fresh salsa. Mmmm…

Now, in Coronado (close to classy San Diego), I go to a sports bar during football season. Their sports food is not bad, but I’m there more for the people- eating and drinking and talking smack. There’s nothing better than watching a good game- 4th quarter, 2 minutes on the clock, game tied. AHHHH!! Love it. Love football. Love sports food. I will sadly and pathetically admit that I miss football when it’s off season.

My team: The Packers. I fell in love with Brett Favre as a teenager. Hubba hubba! I don’t care what happened at the end of his career. I will love him forever. In fact, my heart thumps each time I see Green Bay colors.

It shouldn’t be a surprise that I absolutely LOVE sports food. My inspiration for this recipe: chicken wings and your traditional spinach dip.

Spicy Spinach Dip
½ box of frozen spinach, thawed
¼ onion, finely diced
4 tablespoons butter (2 tablespoons divided)
2 tablespoons flour
1 cup milk
½ cup cheddar
½ chipotle, finely chopped
pinch of dried oregano
2 teaspoons cumin
salt and pepper

Directions:
In a small pan, add butter and saute the onion for a minute. Add spinach and cook for 2 more minutes, stirring constantly. Add the remaining butter and flour. Cook for 1 minute. Add milk slowly stirring constantly. Bring to bubble and add cheddar. Keep stirring until the cheese melts. Turn heat off. Add chipotle, oregano, cumin, salt and pepper. Mix well. Serve warm with tortilla chips. Go Green Bay!
