You know when your jeans don’t fit, and summer is right around the corner? That! Right there! The worst is when my husband tells me that he’s getting “gordito” too. That is usually the point when we lessen our carb intake and have Mexican Chicken Salad with Chipotle Lime Dressing for dinner.

Mexican Chicken Salad with Chipotle Lime Dressing is one of those leftover meals. I use leftover chicken from my big roasted chicken dinner. It gets put into a plastic container and stored in the fridge until ready to use.
I buy a big tub of salad from the store. You know the kind that’s washed and ready to use in the refrigerated section of the store? Yes, that one! I add a big pile of the salad on the plate.
What are your favorite Mexican food staples? Mine… I love corn. The hubs would argue that there are carbs in corn. Blah. Blah. Blah. A spoonful of corn won’t hurt you. I also like tomatoes, queso fresco, pinto beans. You can add peas, pickled carrots, green beans, Spanish olives, avocado, etc.
This Mexican Chicken Salad with Chipotle Lime Dressing comes together fast, giving you plenty of time to put the dressing together. If you’re partial to a certain type of dressing, skip this part. However, I love this dressing. It involves only 4 ingredients.

- 1½ cup cooked chicken, chopped
- 3-4 cups lettuce, chopped
- 1 tomato, diced
- 1 cup cooked corn kernels
- 1 cup cooked pinto beans
- Queso Fresco crumbles
- For Chipotle Lime Dressing:
- Juice of 1 Lime
- Chipotle, finely chopped
- ½ cup sour cream
- To each plate, add lettuce.
- Top with cooked chicken, tomato, corn, pinto beans, and pinto beans.
- Add any other desired toppings
- Set plates aside.
- For the Chipotle Lime Dressing, mix lime juice, chipotle, and sour cream in a bowl.
- Drizzle dressing on top of salad.
